Chef Haikal Johari is the Executive Chef at Alma by Juan Amador, following a distinguished culinary career in some of the finest restaurants in the region, including the highly-acclaimed Water Library restaurants which he helped establish in Bangkok, Thailand.
Chef Haikal brings with him a combination of Asian flavours and influences â€“ from Japanese herbs to Thai spices â€“ which he incorporates into Alma by Juan Amadorâ€™s menu, resulting in fine European cuisine with a nuanced Asian twist.

Inspired by the Thai â€˜Som Tamâ€™ (papaya salad), our yusheng consists of interesting ingredients such as green papaya, fresh beetroot for a vibrant pop of auspicious red, carrots, daikon and turnip to be tossed together for good luck! On top of this, our yusheng includes seaweed from the coast of Brittany, France, as well as myoga, Japanese young ginger. A refreshing and indulgent plum and black truffle vinaigrette is drizzled all over the yusheng. Delicate edible flowers, cresses, and a yuzu kosho snow adds a beautiful finishing touch!Â

The Limited Edition Suntory Whisky Royal, a ceramic boar with 600ml at 43% abv is Now Available at Our Restaurant with a Special Price of $555nett.
The whisky has a scent of marmalade and varnish, with somewhat faint earth and undergrowth notes.
The bottles are baked in the traditional Mino ware style from Gifu Prefecture, central Japan, and are decorated with pine, bamboo and plum flower patterns, which are auspicious symbols. This particular zodiac bottle has been popular every year since being launched in 1982 as objects to bring luck for the new year.
